Beef Stroganoff For Picky Eaters

I love Beef Stroganoff, but there are several issues with my being able to enjoy it... Firstly, I'm allergic to mushrooms. I'm also a bit picky about veggies, so I don't like a lot of onions in my food. After trying a few recipes and mixing things up a bit, I've finally created what I consider to be the perfect recipe for the picky Beef Stroganoff lover!

1 pkg fresh pasta
1 pkg ground beef (1/2 lb+)
8 oz carton of sour cream
2 Tblsp flour
4 Beef Oxo cubes (or other beef bouillon cubes)
1/2 cup water
4 cloves garlic minced
1/4 tsp freshly ground pepper
2 Tblsp butter

1. Stir together flour and sour cream with a whisk. Add in crushed bouillon cubes, water and pepper and stir until combined.

2. Cook beef in butter with minced garlic. Salt and pepper.

3. At the same time, boil pasta and drain. Keep warm and covered.

4. When beef is cooked, drain fat. Stir in sour cream mixture and cook for 2 to 3 minutes on medium heat, stirring regularly. Stir in pasta until coated. Serve hot.

This is a yummy recipe! It's basically a fresher, nicer version of the Hamburger Helper version of Beef Stroganoff I ate as a kid. For a bit of a change, add vegetables if you like. This can also be made with thinly sliced sirloin steak if you prefer.

It takes about 30 minutes, makes lovely leftovers and is perfect for kids, picky eaters and people who are allergic to mushrooms!

  2. I love this go-to and easy comfort food meal and I'm totally with you on the "not a lot of veggies" thing. One thing that I add to my HB is some dried onion flakes. You get the subtle taste of onion without their nasty texture. It really kicks the flavor up with still being kid and picky mom friendly :0)
