Roast Chicken

This recipe for roast chicken is nothing terribly special and is a mix & match of different elements from several recipes I've tried through the years. I got the idea of using a lemon inside the chicken from Camilla Parker Bowles's famous roast chicken recipe.

Roast Chicken Pink Julep Style

Ingredients
Whole chicken
Extra virgin olive oil
Salt
Pepper
Dried dill
Oregano
Parsley
1 lemon

1. Preheat oven to 425 degrees F

2. Wash the chicken and pat dry. Place in a non-stick roasting pan and rub with olive oil. Pierce the lemon several times and place in the cavity of the chicken. Salt and pepper the chicken and sprinkle with dill, parsley and oregano.

3. Bake for 20 minutes at high heat to crisp the skin and seal in the juices, then reduce heat to 350 degrees F and bake for 15 minutes per pound basting twice during cooking.

4. Carve and serve with gravy if desired.

  1. Mmmm!!! I add lemons to mine as well, and if I have it, I throw in some fresh rosemary.
