Cheesy Chilli from Kitchen: Recipes From the Heart of the Home by Nigella Lawson


When I was growing up, my mother made chilli quite a lot and I did get tired of it - in fact I didn't eat it for years after leaving home. Since moving to London, the weather has made chilli seem a lot more appealing. It's great for a cold day - it also makes fantastic leftovers for a warm lunch! I've experimented with my own methods for making this classic soup, however this time around, I decided to make Cheesy Chilli from Kitchen by Nigella Lawson. I just got this cookbook and this is the first recipe I've made from it - I must say, it was amazing!


I was intrigued by this recipe primarily because of its use of chorizo, which is my new favorite food. I never cooked with chorizo until about 2 weeks ago - I've used it a fair few times since.



Another interesting choice in this recipe is the use of fresh mozzarella cheese. I have always associated chilli with cheddar cheese, so I was eager to give this a try.


The chorizo gives this particular recipe for chilli a beautifully vibrant orange color. I personally don't like chunky tomatoes in my soups & sauces, so I popped the can of chopped tomatoes into the blender for a blitz before adding them to the chilli. Blending the tomatoes also makes them a bit more orange - it's a beautiful color and really brightens up the dinner table!


All-in-all I love this recipe. I particularly love that you can freeze half of it for up to three months - something that comes in handy, especially when you're only cooking for one or two. In the future, I might avoid putting the mozzarella into the chilli only because it makes a mess of the pan, but if you don't mind the mess, I can promise you - it's gooey, cheesy deliciousness! Served with tortilla chips, it's the perfect dinner for a cool night.

  1. oooh this does look good, have you tried the spanish chicken and chorizo recipe in that book? one of my faves and the chorizo flavours the potato and there is only one tray to clean at the end. The marmite spaghetti is a favourite in my house too. Love that book.

    1. I am not a marmite fan, so I'll probably skip that one... I haven't made Nigella's Chicken & Chorizo recipe yet, but I made something similar a few weeks back and it was delish so I'll definitely try it soon! x
