Chilli Lime Cod & Pasta


This might sound like a weird recipe, but it's so delicious and an easy, quick dish you can throw together anytime for lunch or dinner. I like to use cod because I get this great frozen cod from Marks & Spencer that can be cooked from frozen, but you could probably use any white fish with this or even salmon.

Also, there are two flavors here that don't normally go together - fish and cheese. However, I'd like to state that I have become a massive fan of fish paired with parmesan cheese and citrus flavors. It totally works and I dare you try it, however if you think this is bananas, just omit the parmesan cheese and I won't judge you... 


Ingredients (serves 1 - double, triple or quadruple the recipe as needed)
1 tablespoon extra virgin olive oil
Zest & juice of 1 lime
1 1/2 teaspoons veggie Oxo paste
1/4 teaspoon crushed chillis plus more for sprinkling fish
1/2 cup (125g) fresh pasta of your choice
1/3 cup (75g) frozen soya beans (shelled edamame)
Salt & Pepper
1/3 cup shredded parmesan cheese


Method

1. Preheat oven to 200°C (400°F) and prepare a baking pan or loaf tin with non-stick spray.

2. Place the fish fillet in the pan. Drizzle 1 tablespoon of olive oil and 1 teaspoon of lime juice over the fish. Sprinkle salt, pepper, a few dried chili flakes and a pinch of lime zest on top. Cover and bake for 20 to 25 minutes or until cooked through depending on the size of the fish fillet you use.

3. Meanwhile, boil salted water with a drop of olive oil in it for the pasta. When the water comes to a boil, cook the pasta according to packet instructions. I like to boil the soya beans in the pasta to keep things easy since they usually require about the same amount of time, but if you prefer to cook them separately, you can also boil the soya beans at this stage. Before straining the pasta, reserve about 1/2 cup (you can use a coffee cup to do this) of the pasta water - you will use this later in the sauce.



4. In a small bowl, combine the veggie OXO paste, a pinch of salt, a few grinds of black pepper, the remaining lime juice & zest and the reserved pasta water. Stir until well combined.

5. Pour the sauce you've mixed directly into the pasta and soya beans. Add 1/2 of the parmesan cheese and toss/stir until every piece of pasta is coated with the mixture. If necessary, do this over low heat.

6. When the fish is completely cooked, remove from the oven and place on top of a bed of pasta.


7. To finish, sprinkle with the remaining parmesan cheese.


If you prefer your food really spicy, feel free to double the measurement of dried chili flakes. If you don't like spicy food, you can also half the measurement or remove them all together, but the flavor combination of the chillis with lime is intense and delicious!


Also, I've used soya beans here because they're easy and I love them, but you can totally add other veggies like peas, corn, onions, peppers or whatever you like.
