Garlicky Edamame & Peas on Toast

I did a recipe a while ago for Sea Salted Edamame Pea Dip that's pretty similar to this, but the last time I made it I found myself spreading it on 7 seed toast and it's so satisfying as a lunch, light dinner or even as something a little different for breakfast. I've changed up the recipe a little by adding some salty Parmesan cheese and sprinkling some seeds on top, but honestly this is so simple and easy to make. I like to make it ahead, put the vibrant green paste in the fridge and spread it on toast as & when needed... It's the perfect snack!

100g frozen petit pois
50g frozen shelled edamame (soya beans)
3 tablespoons freshly grated Parmesan cheese
1 tablespoon garlic oil
4 slices toasted bread of your choice (I like a 7 seed variety for this, but any bread will do.)
Sprinkle of sunflower or pumpkin seeds
Sea salt flakes to taste

1. Boil the petit pois until soft. Add the frozen soya beans and when the water bubbles again, continue boiling for 5 minutes.

2. Strain the peas & edamame and add to the bowl of a food processor along with the garlic oil and Parmesan cheese. Whiz until you have a mushy paste.

3. Toast your bread on both sides and spread the paste, splitting it evenly between the 4 slices. Sprinkle with sea salt flakes and sunflower & pumpkin seeds and enjoy.
