5 Recipes to Make on Sundays and Microwave for Lunch or Dinner All Week

On more than one occasion I've heard people say that cold lunches just aren't for them and to be honest, I have a tendency to feel the same, especially on chilly days. I've never been much of a sandwich person and I don't like salad, so I've been making things to microwave for lunch since I became an adult though admittedly I'm a lot better at putting these things together now than I was in my early 20's. 

I have a few tried and true recipes that I love to make on a Sunday and microwave throughout the week. I like to store these dishes in individual servings and I use Sistema microwaveable storage containers to make things easier. (Scroll down to shop some of my favourites!) I just grab and go every day and lunchtime is super easy. Sometimes do this for dinners too if I know I'm going to be too busy to cook through the week, if I know my husband and I will be dining at different times or if I'm going to be at a class or something during any evenings through the week. My husband is a total sport and will usually cook if I'm going to be out, but sometimes our schedules mean that both of us are busy, so this is a simple solution. I spend a few hours on a Sunday prepping and cooking a couple of these recipes and before I know it, my food is sorted for the week.

If you enjoy buffalo chicken, then this slow cooker recipe is for you! Easy to make and even easier to eat, this alternative to chilli is perfect for throwing into a microwaveable bowl and heating up for lunch. Warm, cheesy and spicy, this is a great one for colder days. I like to serve this over rice, but you can enjoy it on its own. It would also be lovely alone with some pita, tortilla chips or even served like a soft taco in a tortilla style wrap. Cheesy cottage pie
This simple take on cottage pie is easier to make than most of the things I cook on a regular basis and it makes the best leftovers! With veggies, meat, starch and cheese all combined, it's a perfect all-in-one kind of dish and it microwaves really well. Nothing else is needed, but if you like a heavy lunch, a bit of crusty bread on the side would be a nice compliment and you could use it to scoop up every last bit of the delicious sauce. 3. Kielbasa, Cheese Tortelloni & Cannellini Bean Soup

If you feel like your in a bit of a lunch rut, this recipe is definitely something different and you can alter it each time you make it by switching up the Polish sausage you use since many varieties of them have distinctly different flavours. The cheesy tortelloni beautifully compliments the earthiness of the beans and the smokey sausage. A sprinkle of parmesan cheese adds just the right amount of saltiness. 4. Orzo Soup With Garlicky Parmesan Turkey Meatballs

This is my all-time favourite soup and I make it regularly on a Sunday to have for lunch throughout the coming week. It never gets old for me and I could probably eat this every day for the rest of my life and never get sick of it. It's meaty, filling, punchy with garlic and cheesy... 5. Pizza Pasta

Another great one for the microwave, Pizza Pasta is perfect for lunchtime. It has ham and pepperoni alongside tomato sauce, melty cheese and filling pasta. I love this when it's fresh from the oven, but if I'm honest, it's one of those recipes that I almost prefer as leftovers.
